Cheesy Baked Frittata with Microgreens

Serves 4 people

Ingredients

  • 6 eggs
  • A handful of shredded cheese of your choice
  • 1/2 C chopped Mad House Farms Radish Microgreens
  • 1/4 C chopped mushrooms (any additional veggies are great too!)
  • A splash of milk
  • Salt, pepper & garlic powder to taste
  • 9-inch square baking dish
  • Parchment paper

Prep Instructions

  • Preheat oven to 400°.
  • Line baking dish with parchment paper to cover up the sides.
  • In a bowl whisk together eggs, cheese, milk, mushrooms (extra veggies if you added them) and seasonings.
  • Pour the mixture in the baking dish on top of the parchment liner.
  • Bake until the frittata has a puffy golden surface and the center feels firm and a bit springy. Estimated bake time ~ 25 minutes.
  • Cut frittata into quarters and plate.
  • Equally top each portion with Radish Microgreens.
