Serves 2 people
Ingredients
- 2 medium sized boneless skinless chicken breasts
- 1 C white rice
- 1/2 C Mad House Farms Cilantro Microgreens
- 1 C broccoli lightly steamed
- 1 C chopped green & purple cabbage
- 1 Tbsp Mayonnaise
- 1 Tbsp Sriracha sauce
- Garlic powder, salt and pepper to season
- Soy sauce to taste
Prep Instructions
- Preheat oven to 375°
- Cook white rice per package instructions
- Season chicken breast on each side with garlic powder, salt & pepper, and bake for 20-30 minutes, until internal temp reaches 165°
- Mix mayonnaise and Sriracha together, cover and place in fridge
- Chop cabbage into bite size pieces
- Steam or boil broccoli until al dente
- When fully cooked, split the rice between two bowls and top each with equal parts vegetables and sliced chicken breast.
- Add a dollop of Sriracha mayo on top of the chicken
- Garnish each bowl with a 1/4 C Cilantro Microgreens
