Chicken and Rice Bowl with Cilantro Microgreens

Serves 2 people

Ingredients

  • 2 medium sized boneless skinless chicken breasts
  • 1 C white rice
  • 1/2 C Mad House Farms Cilantro Microgreens
  • 1 C broccoli lightly steamed
  • 1 C chopped green & purple cabbage
  • 1 Tbsp Mayonnaise
  • 1 Tbsp Sriracha sauce
  • Garlic powder, salt and pepper to season
  • Soy sauce to taste

Prep Instructions

  • Preheat oven to 375°
  • Cook white rice per package instructions
  • Season chicken breast on each side with garlic powder, salt & pepper, and bake for 20-30 minutes, until internal temp reaches 165°
  • Mix mayonnaise and Sriracha together, cover and place in fridge
  • Chop cabbage into bite size pieces
  • Steam or boil broccoli until al dente
  • When fully cooked, split the rice between two bowls and top each with equal parts vegetables and sliced chicken breast.
  • Add a dollop of Sriracha mayo on top of the chicken
  • Garnish each bowl with a 1/4 C Cilantro Microgreens
