Street Tacos with Cilantro Microgreens

Street Taco Ingredients (makes 16 tacos):

  • 1 ½ pounds marinaded flank steak
  • 1 white onion (diced)
  • 2 heaping handfuls of MHF Cilantro Microgreens
  • 16 mini tortillas (your choice of corn or flour)

Steak Marinade Ingredients:

  • ½ Cup olive oil
  • 4 Tbsp fresh squeezed lime juice
  • ½ Cup MHF Cilantro Microgreens (chopped)
  • 4 tsp minced garlic
  • 1 tsp cumin powder
  • ½ tsp chili powder
  • Salt & pepper to taste

Steak Marinade Instructions:

  • Combine all marinade ingredients in a bowl.
  • Place steak in a glass baking dish with sides.
  • Brush half of the marinade over the top of the steak to make sure it’s coated.
  • Turn the steak over and coat with remaining marinade.
  • Cover with plastic wrap and keep in refrigerator for 3 hours.
  • Remove the steak from the refrigerator and bring to room temperature.
  • Heat grill to medium-high and cook the steak 5-7 minutes per side.
  • Let sit for 5 minutes before carving against the grain in thin tortilla size strips.

Taco Instructions:

  • Warm tortillas in pan or microwave.
  • Add sliced flank steak.
  • Top with cilantro, onion and fresh squeezed lime wedges.
