Sweet & Spicy Roasted Carrots with Microgreens

Serves: 4

Ingredients:
• 1 Tbsp. butter
• 3 Tbsp. raw honey
• 1/8 tsp. Cayenne Pepper (or more if you want extra spicy)
• 2 pounds of raw carrots
• 1 handful of Mad House Farms Carrot Microgreens
• 1/4 tsp. pepper
• 1/4 tsp. salt
• Oven-proof skillet

Prep Instructions:
• Heat oven to 425°
• Chop carrots into 2-inch pieces.
• Melt the butter over medium-high heat in the oven-proof skillet. Add honey, cayenne, salt & pepper. Bring to a boil.
• Once boiling add carrots and toss until they are completely coated.
• Place the carrots in the oven and cook for 20 minutes, or until you can easily pierce with a fork.
• If you would like a little char, broil for 2-3 minutes watching as they will burn easily.
• Remove the pan and continue to cook over a medium-high burner to caramelize the remaining honey. Just around 2 minutes until the honey starts to darken. Remove from burner.
• Sprinkle the carrots with Carrot Microgreens and you are ready!
