
Ingredients (6 people):
- MHF Wasabi Microgreens
- 1.5 pounds red potatoes cubed with skin on, or off if you must :-)
- 0.5 Cup grass fed butter
- 1.5 Tbsp minced garlic
- 3 sprigs of minced rosemary
- 2 tsp. garlic powder
- 0.25 Cup parmesan cheese
- Salt & Pepper to taste
Directions:
- Bring a large pot of water to boil while you cube the potatoes.
- Boil the potatoes until cooked tender when poked with a fork.
- Pour out the water and potatoes in a strainer and let sit.
- While potatoes are draining add butter, garlic, garlic powder, rosemary and salt & pepper to the pot they cooked in.
- Sauté over medium heat until the garlic becomes fragrant, roughly 2 minutes.
- Add potatoes back to the pot and stir in with butter mixture.
- Chop the Wasabi Microgreens into bite size pieces.
- Gently fold in the Microgreens and Parmesan cheese in with the potatoes.
- Dish up and garnish with a pinch more of Wasabi Microgreens.
